This whole grain cereal is rich in fibre and other important folates like selenium, great for heart health. Plus, the fibre content makes you feel fuller for longer, promoting weight loss.
INGREDIENTS-
- 1 cup Boiled Pearl Barley
- 2-3 Garlic cloves
- 1 small Cucumber chopped
- ½ Onion chopped
- ½ Pomegranate seeds
- 3-4 Roasted Walnuts
- 1 tsp Lemon juice
- 1 tsp Balsamic vinegar
- 1 tsp Honey
- 1 tsp Olive oil
- Orange segments- 1/2
- Handful of lettuce
- Salt and Pepper to taste
PROCEDURE-
1. In a medium bowl, soak pearl barley for half an hour. Bring to a boil at medium flame. Drain the water and let it cool.
2. In a large bowl, add finely chopped garlic and the boiled & cooled barley.
3. Add in the rest of the ingredients and toss them together.
