Millet khichdi is a pot gluten-free meal made with millets, moong dal, spices and mixed vegetables.
Ingredients–
- ½ cup Millet of your choice (such as Foxtail millet, Little millet or Barnyard millet)
- ½ cup Moong dal
- 2 ½ cups Water
- 1 small Tomato (chopped)
- 1 Onion finely chopped
- 1 Carrot chopped
- ½ cup Green Peas/Beans
- ½ tsp Mustard seeds
- ½ tsp Cumin seeds
- ½ tsp Turmeric powder
- ½ tsp Red chilli powder
- Salt to taste
- 1 tsp Ghee
Procedure–
- Wash the millets and lentils together and soak them in water for at least 1 hour
- Heat the pressure cooker, add ghee, cumin seeds and mustard seeds. Let them splutter. Add chopped onions, green chilies. Saute until onions turn translucent. Add chopped tomatoes and cook until they turn mushy. Add chopped vegetables (carrot beans, peas) and sauté for a few minutes.
- Drain the soaked millets and lentils and add them to the cooker. Add turmeric powder, chilli powder, dhaniya powder. Mix well. Pour in water and stir everything together.
- Close the pressure cooker and cook for 3-4 whistles or until the millets and lentils are cooked through.
- Once done, let the pressure release naturally.
Open the cooker, give the khichdi a good mix, and adjust the consistency by adding more water if needed.
