Paneer Pineapple Salad

INGREDIENTS-
(1 serving)

  • 80–100 g paneer (cubed)
  • ½ cup fresh pineapple (small cubes)
  • 1 cup lettuce / mixed greens (chopped)
  • 4–5 strawberries (sliced) (optional but great for antioxidants)
  • 1 tbsp pomegranate arils or blueberries (optional)
  • 5–6 walnuts / pecans (roughly chopped)
  • 1 tsp pumpkin or sunflower seeds

DRESSING-

  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Pinch black pepper
  • Pinch pink salt / rock salt
  • Optional: ½ tsp honey

PREPARATION-

1.Grill or lightly sauté paneer cubes on a non-stick pan (no oil or few drops only) till golden.
2. In a large bowl add lettuce, pineapple, fruits and nuts.
3. Add warm paneer on top.
4. Mix dressing separately and pour over salad.
5. Toss gently and serve immediately.
