Egg Muffins

INGREDIENTS-

  • 6 Eggs
  • ½ cup chopped Spinach
  • ½ cup diced Tomatoes
  • ¼ cup chopped Onions
  • ¼ cup chopped Capsicum
  • ¼ cup grated Cheese
  • Salt and Pepper to taste

PROCEDURE-

1. Preheat oven to 350-degree F (175 degree C)
2. Whisk eggs and mix in vegetables and cheese.
3. Season with salt and pepper
4. Pour mixture into greased muffin tins
5. Bake for 15-20 minutes until set.
6. Allow the muffins to cool in the tin for a few minutes before removing.
