Grilled Chicken Salad

This Grilled Chicken Salad combines marinated chicken, fresh veggies, and bold Greek flavors all in one tasty and easy dinner. This salad promises a delightful and wholesome dining experience that will leave you full and satisfied.


INGREDIENTS-

For Salad-

200gms Chicken breast
1 large Cucumber
2 cups Lettuce
1/2 cup Cherry Tomatoes
1/2 cup White Onions

For Chicken Marination-

1/2 bowl Greek Yogurt
1/2 tsp Olive oil
1 tsp Lemon juice
3-4 Cloves Garlic
1/4 tsp Mixed herbs

For Dressing

3 tsp Lemon juice
2 tsp Olive oil
1/2 tsp Oregano
5-6 cloves minced Garlic
Salt and Black pepper to taste

HOW TO MAKE?

1. Marinate the Chicken-

Make the Greek yogurt marinade in a big bowl by combining yogurt, olive oil, lemon juice, garlic and herbs. Add chicken tenders and give them a toss to coat. Cover and keep chicken in the fridge for 20 mins.

2. Make the Salad Dressing-

Start by making the olive oil and lemon dressing.

– In a bowl combine lemon juice with dry oregano, minced garlic cloves, salt and black pepper. Whisk to combine
-while whisking, slowly drizzle the extra virgin olive oil and continue whisk vigorously.

– In a large bowl add chopped lettuce, cucumber, cherry tomatoes, green onion
– Add dressing and toss.

3. Cook the Chicken-

– Heat up a nonstick pan with a bit of olive oil. Add the chicken and cook on each side, and flip over and cook for a few more minutes until chicken is well cooked.

– Add cooked chicken to vegetable bowl and add bit more of dressing over the chicken and enjoy!
