Millet Fried Rice

INGREDIENTS

1 cup Foxtail Millet
1/2 cup French Beans (finely chopped)
1/2 cup Red Yellow or Green Bell Pepper (finely chopped)
1/2 cup Carrots (finely chopped)
1/2 cup Spring Onion (finely chopped)
1 inch Ginger (grated)
1 teaspoon Soy sauce
1 teaspoon Black pepper powder
1/ 2 tsp Oil
1/2 tsp ghee
Salt to taste

PROCEDURE

1. To begin making the Fried Rice Recipe, we will first cook the foxtail millet. Soak the millet in water for at least 30 mins. Drain the water and transfer it to a cooker, add 2 cups of water, salt and 1 tsp of ghee. Pressure cook the millet for about 4 whistles ,1 on high flame and 3 on low flame.

2. Once the cooking time is up, allow the pressure to release naturally and let it cool completely.

3. Heat oil in a pan, add the ginger, beans, carrots, bell peppers and sauté on high flame for 3 – 4 minutes until the vegetables become slightly tender.

4. Add foxtail millet, soy sauce, black pepper, and salt. Mix well and garnish with spring onions.
