Rajma Salad

This simple Rajma Salad is a protein- rich, refreshing, and flavorful dish perfect for a light meal or a healthy side.

INGREDIENTS-

1 cup boiled Rajma
1/2 cup Cucumber ( chopped)
1/2 cup Lettuce ( chopped )
1/2 cup Carrot ( chopped )
1/2 cup Bell peppers ( chopped )
1/2 cup Tomato ( chopped )
1/4 cup Onion ( chopped )
1/4 cup fresh Coriander ( chopped )

FOR DRESSING-

1 tsp olive oil
1 tsp Lemon juice
1 tsp Honey
Salt to taste
1/4 tsp Black pepper
1/4 tsp Jeera powder
1/4 tsp Chaat masala

INSTRUCTIONS-

  1. Soak the rajma overnight and pressure cook them with water for about 5 to 6 whistles. After 5 to 6 whistles, turn the heat to low and simmer for another 20 minutes.
  2. Allow the pressure to release naturally. The rajma should be soft and cooked.
  3. Into a mixing bowl, add the cooked rajma, onions, tomatoes, bell peppers, cucumber, carrot, lettuce, fresh coriander, mix well.
  4. In another small bowl, whisk together olive oil, lemon juice, honey, salt, black pepper, jeera powder, chaat masala, mix it well to prepare the dressing.
  5. Pour the dressing over the salad and toss gently.
  6. Let it sit for 10 mins for flavours to blend, then enjoy fresh rajma salad.
