This simple Rajma Salad is a protein- rich, refreshing, and flavorful dish perfect for a light meal or a healthy side.
INGREDIENTS-
1 cup boiled Rajma
1/2 cup Cucumber ( chopped)
1/2 cup Lettuce ( chopped )
1/2 cup Carrot ( chopped )
1/2 cup Bell peppers ( chopped )
1/2 cup Tomato ( chopped )
1/4 cup Onion ( chopped )
1/4 cup fresh Coriander ( chopped )
FOR DRESSING-
1 tsp olive oil
1 tsp Lemon juice
1 tsp Honey
Salt to taste
1/4 tsp Black pepper
1/4 tsp Jeera powder
1/4 tsp Chaat masala
INSTRUCTIONS-
- Soak the rajma overnight and pressure cook them with water for about 5 to 6 whistles. After 5 to 6 whistles, turn the heat to low and simmer for another 20 minutes.
- Allow the pressure to release naturally. The rajma should be soft and cooked.
- Into a mixing bowl, add the cooked rajma, onions, tomatoes, bell peppers, cucumber, carrot, lettuce, fresh coriander, mix well.
- In another small bowl, whisk together olive oil, lemon juice, honey, salt, black pepper, jeera powder, chaat masala, mix it well to prepare the dressing.
- Pour the dressing over the salad and toss gently.
- Let it sit for 10 mins for flavours to blend, then enjoy fresh rajma salad.
