These stuffed mushrooms are pretty easy to make with the mixture of herbs and cheese. Mushrooms are naturally low in calories, making them a great base for a healthy dish.
INGREDIENTS-
(SERVES 1)
- 200 gm White Button Mushrooms
- 1 medium Onion (Finely chopped)
- 5-6 Cloves of Garlic (Finely chopped)
- 1/2 tbsp Olive Oil
- 1/2 tsp dried Oregano
- Mozzarella Cheese
- Salt to taste
- Black Pepper to taste
PROCEDURE –
1. First rinse and wipe mushrooms. Slice off a bit of the muddy part of the stalks and discard them. Then just break each stalk from the mushrooms.
2. Keep the stalks as well as the mushroom caps aside.
3. Chop off all the stalks finely.
4. Heat olive oil in a pan. Add chopped garlic and sauté for few seconds.
5. Add chopped onion, sauté till the onions become light golden.
6. Now add the finely chopped mushroom stalks. Mix very well and sauté on a medium heat. The mushrooms will initially release some moisture. Sauté till the mushroom mixture is dry.
7. Season with dried oregano, black pepper, salt and mix well.
8. Preheat the oven at 180°C for 15 mins. As the oven preheats use a small spoon to place the stuffing in each mushroom cap, and top up with some cheese.
9. Grease a baking tray with some olive oil. Place the stuffed mushroom caps on a baking tray. Bake at 180° C/356 ° F for 15 to 20 minutes.
10. Allow to cool for a few minutes, garnish with pesto sauce, parsley leaves or coriander leaves and enjoy with a bowl of green salad or your choice of soup!
