A vegetable known for its high-water content and low-calorie count. This soup is low in calorie and fat, making it ideal for weight management, digestion and detoxifying our body. Additionally, its high-water content helps keep you hydrated. Lauki has low glycemic index and hence one of the best vegetable options for those with high blood sugar levels.
INGREDIENTS-
- Lauki (200-250 gms)
- 1 tsp olive oil
- Onion (1 medium size roughly chopped)
- 7-8 Garlic cloves
- ¼ tsp dried mixed herbs
- ¼ tsp black pepper
- Salt to taste
- ½ cup milk (if needed)
PROCEDURE-
- Heat olive oil in a pressure cooker. Add chopped onion and chopped garlic.
- Sauté stirring often on medium heat until onions soften.
- Add chopped bottle gourd sauté for about 1-2 mins.
- Add 2 cups of water to the vegetables. pressure cook on medium heat for 2 whistles.
- Let the pressure drop naturally in the cooker. Then only open the lid. Allow the heat reduce a bit and let the bottle gourd pieces become warm.
- Transfer it in a blender, blend and puree the veggies to a fine consistency.
- Add salt to taste and flavor it with dry mixed herbs and black pepper.
- Mix and simmer until hot.
For a creamier consistency, add ½ cup milk.
