An easy and delicious breakfast recipe perfect for quick mornings. Made with oats and mixed vegetables.
Ingredients:
- 1 cup oats
- 1 small onion, finely chopped
- 1 small carrot, finely chopped
- 1 small capsicum, finely chopped
- 1/4 cup green peas (optional)
- 1/4 cup chopped mixed vegetables of your choice (e.g. beans, bell peppers)
- 2 green chilies, finely chopped
- 1/4 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder (optional)
- 1 tablespoon oil
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
- Dry roast the oats in a pan for a few minutes until they turn slightly golden and aromatic. Set them aside.
- Heat oil in a pan and add the mustard seeds. Once they start spluttering, add the cumin seeds and let them crackle.
- Add the chopped onions and green chilies to the pan. Saute until the onions turn translucent.
- Add the chopped vegetables (carrots, capsicum, peas, etc.) and cook for a few minutes until they are slightly tender.
- Add turmeric powder, red chili powder (if using), and salt. Mix well.
- Add the roasted oats to the pan and mix everything together.
- Stir in 2 cups of water and bring it to a boil.
- Reduce the heat and cover the pan with a lid. Cook for about 5-7 minutes or until the oats are cooked and the water is absorbed. Stir occasionally to prevent sticking.
- Once the oats are cooked, switch off the heat and let it sit for a few minutes.
- Garnish with fresh coriander leaves and serve hot.
