Oats Upma

An easy and delicious breakfast recipe perfect for quick mornings. Made with oats and mixed vegetables.

Ingredients:

  • 1 cup oats
  • 1 small onion, finely chopped
  • 1 small carrot, finely chopped
  • 1 small capsicum, finely chopped
  • 1/4 cup green peas (optional)
  • 1/4 cup chopped mixed vegetables of your choice (e.g. beans, bell peppers)
  • 2 green chilies, finely chopped
  • 1/4 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (optional)
  • 1 tablespoon oil
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

  1. Dry roast the oats in a pan for a few minutes until they turn slightly golden and aromatic. Set them aside.
  2. Heat oil in a pan and add the mustard seeds. Once they start spluttering, add the cumin seeds and let them crackle.
  3. Add the chopped onions and green chilies to the pan. Saute until the onions turn translucent.
  4. Add the chopped vegetables (carrots, capsicum, peas, etc.) and cook for a few minutes until they are slightly tender.
  5. Add turmeric powder, red chili powder (if using), and salt. Mix well.
  6. Add the roasted oats to the pan and mix everything together.
  7. Stir in 2 cups of water and bring it to a boil.
  8. Reduce the heat and cover the pan with a lid. Cook for about 5-7 minutes or until the oats are cooked and the water is absorbed. Stir occasionally to prevent sticking.
  9. Once the oats are cooked, switch off the heat and let it sit for a few minutes.
  10. Garnish with fresh coriander leaves and serve hot.
