Protein Packed Rajma Mexican Wrap

INGREDIENTS-

For the roti-

🔹1 cup Wheat flour
🔹2 tsp Oil
🔹Salt to taste

For the rajma filling –

🔹1 cup soaked and boiled Rajma
🔹2 tsp Oil
🔹1 tsp finely chopped Ginger
🔹1 tsp finely chopped Garlic
🔹1/2 Turmeric powder
🔹1 tsp Dhaniya powder
🔹1 tsp Red chilli powder
🔹1 tsp Mexican seasoning
🔹1 finely chopped Onion
🔹1/ 2 cup grated Cucumber
🔹1/2 cup grated Carrot
🔹1/2 cup fresh Coriander leaves
🔹4-5 lettuce leaves
🔹Salt to taste

PROCEDURE –

  1. Combine wheat flour, oil, salt in a bowl and knead into a soft dough using enough water.
  2. Divide the dough into equal portions and roll out.
  3. Heat the non-stick tawa and lightly cook the rotis on both the sides. Keep aside.
  4. Hear the oil in a pan , add ginger, garlic and onion and sauté on a medium flame.
  5. Add turmeric powder, dhaniya powder, red chilli powder and sauté for a few seconds.
  6. Add rajma , mix well and cook on a medium flame for 1-2 minutes.
  7. Now add the coriander leaves, Mexican seasoning and salt and mix well.
  8. Place the roti on a clean dry surface, place 2 lettuce leaves over it.
  9. Place the prepared rajma filling in a row in the centre of the roti , arrange the grated cucumber and carrot over it and roll up the rori tightly .
