This ancient grain is rich in fiber and protein, as well as many important micronutrients.
In particular, amaranth is a good source of manganese, magnesium, phosphorus, calcium and iron.
Amaranth also called Rajgira in Hindi is a gluten-free grain.
To add sweetness to these Ladoo’s I have used dates and anjeer.
Next is Pumpkin and Flax Seeds which are tiny seeds packed with healthy fats and nutrients.
Ingredients-
2 Cups Popped/Puffed Amaranth
1 Cup Dates
5-6 dried Anjeer
3 tsp roasted Pumpkin seeds
3 tsp roasted Flax Seeds
3 tsp roasted Sunflower seeds
3-4 tsp Cocoa Powder
1/2 cup Almonds
2-3 tablespoon of Coconut oil or extra virgin olive oil
2-3 tsp honey
Procedure:
- In a food processor add in the pitted dates, anjeer, almonds, seeds, cocoa powder, olive oil and honey
- Process it until it forms like a lump and the dates are almost chopped completely.
- Now add the mixture into the Amaranth bowl and mix well
- Prepare bite size Ladoo’s or make energy bars of the same and serve this nutritious Ladoo’s to your loved ones
