Raw Mango and Papaya Salad

•1/3 cup lime juice
•1 clove garlic
•1 tsp coconut sugar
•2 Thai bird chillies
•1 small/500 gm green papaya
•1/2 cup raw mango
•2 small tomatoes, cut into bite-sized pieces
•1/2 cup green beans, cut into 1 1/2 inch pieces
•1/3 cup peanuts, crushed
•Handful of cilantro


  1. Put lime juice, chillies, garlic and coconut sugar in a blender. Puree the mixture. You can also mince and grate the garlic and whisk the dressing together.
  2. Peel the papaya and slice it. Use a spoon to scoop out the white seeds and pith from the centre.
  3. Shred the papaya using a blender or grate into a large bowl.
  4. Shred or grate the raw mango into the bowl.
  5. Pound the green beans to tenderize. Add in the green beans, tomatoes, crushed peanuts and cilantro.
  6. Pour the earlier prepared dressing on top and toss to coat.
