INGREDIENTS
- 1-2 ripe tomatoes, cut in small dice
- 1 cucumber, cut in small dice
- ½ bowl corn kernels, steamed for 4 minutes
- 1to 2 green chili spicy/nonspicy, minced (seeded for a milder salad)Salt to taste
- ¼cup chopped cilantro/coriander
- 2tablespoons rice vinegar/apple cider vinegar
- 1tablespoon fresh lemon juice
- 2tablespoons extra virgin olive oil
- Optional: Low-fat panner, crumbled (about 1/4 cup)
PREPARATION
Mix together all of the ingredients. Let sit in or out of the refrigerator for 15 minutes before serving, then toss again.
