Simple Corn, Tomato, and Cucumber Salad


  • 1-2 ripe tomatoes, cut in small dice
  • 1 cucumber, cut in small dice
  • ½ bowl corn kernels, steamed for 4 minutes 
  • 1to 2 green chili spicy/nonspicy, minced (seeded for a milder salad)Salt to taste
  • ¼cup chopped cilantro/coriander
  • 2tablespoons rice vinegar/apple cider vinegar
  • 1tablespoon fresh lemon juice
  • 2tablespoons extra virgin olive oil
  • Optional: Low-fat panner, crumbled (about 1/4 cup)


Mix together all of the ingredients. Let sit in or out of the refrigerator for 15 minutes before serving, then toss again.
